Banana Chocolate Chip Muffins

Hello!! 

I made some awesome muffins today and just want to share!! 

Here in California, if you blink your bananas will look like this:

 

We are talking a couple days up to a week if you forget, or get busy, they get covered up.. etc. Its happening WAY too often to me! So I've been searching for alternatives to Banana Bread. Not that it's bad, just looking for something different! 

In my Pinterest (follow me here) perusing I found this recipe from Crunchy Creamy Sweet. They looked pretty easy, I had all the ingredients AND it said 'skinny'. By this I mean no oil and greek yogurt is used instead. I'm always game because I tend to eat more than my fair share! 

I whipped these up this morning before it got too warm. A note about hot California - baking has to be restricted to early morning or late evening. :( They were pretty simple and fast. The two substituions I used were regular whole wheat flour vs white whole wheat and I only had semi-sweet chocolate chips. 

I baked for the 5 minutes, then another 13 or so. My toothpick seemed clean, but I think they needed to bake a bit longer. They are not as fluffy as Anna's and they 'sank' as they cooled in the pan for a bit. However that did not alter the taste! Here is the final product:

 

Even Hannah approved and chowed down on one after her nap! They have a great flavor and I'll definitely be making some more!!

Update: No Soda September

So I issued this challenge at the beginning of the month:

 

Did you decide to Join? If so how are you doing? 

Have you had ANY soda?

My update - This has been harder and easier than I thought. 

As of today - the 15th - NO SODA!! WOO!!

What I am doing to combat the cravings - most water and more water. with LOTS of Ice! I have had a jug of crystal light a couple times just because its been ridiculously hot and the flavoring really helps me drink something. I almost daily have my BCAAs. usually in the afternoons. Yes I have coffee. 

So Have I been tempted?! YES! its been so hot that I'm like please I just want a $1 McDonalds coke or the ones from the gas station... AND more than once hubby has brought home a 2L of diet coke. AHHH IN THE HOUSE! Its so hard, but I haven't had any!! But I'm determined to make it through the end of the month!

NO Soda September

YES you read that correctly.

This is my plan for the month and I want YOU to join me! 

 

Soda is so hard for me. When I was working I depended on it a lot for all my travels and just making it through a work day! But since being home more, I will drink it when we go out or if we buy it. So I have been trying to just NOT buy it. I have been pretty successful. However the heat here in California always gets to me on the weekends and I end up with a $1 coke from somewhere... 

So last week a friend posted this photo in a group I'm in on Facebook:

Ok Ya'll for real. Look at this. And you KNOW it is true! I have pretty sensitive teeth and I know soda makes it worse. I totally believe that it can affect your skin - all the chemicals in soda?! I won't even go into the aspartame stuff. Do the research yourself - or don't. I bet you already know. But if you really want something to kick your butt in gear - go read. and don't be eating while you do it. It's pretty disgusting!!

So my challenge is NO soda for the month!! 

What do you do instead?! 

Well.. WATER! Duh! But I know water isn't ALL that appealing all the time. Tea, coffee, flavored water - even carbonated water. I love my water loaded with ice and cold! This isn't about no caffeine. Its about no SODA. I hesitate to include things like Crystal light because it is full of fake sweetener as well. So just be careful! 

My favorite thing to use is BCAAs. They are Amino Acids that have energy qualities and yes some caffeine. My favorite is:

Optimum Nutrition Amino Energy - Concord Grape

I use this pre-workout for a good boost and to not get sick off coffee or anything else and I more frequently use it when I hit that afternoon slump. You can vary the amount you use for flavor and caffeiene. I do 2 scoops usually. It definitely hits the spot! I will say this brand DOES have sucralose in it. There are some brands like MRM Reload that have a few flavors without that sweetener. Just read your labels!

Alright Friends! I'm going to start of simple by rejoining Jeannette at LifeRearranged for Instafriday.

Sunday was National Ice Cream day. I have been trying to not keep ice cream in the house. I would eat it wayyy too much in this heat! So we headed to the corner McDonalds for a little treat. I always get the hot fudge sundae and never eat the nuts. I prefer this over cones because you can enjoy it at a slower pace!!

A few weeks ago my friend Shannon posted a pic and in it her nails were this glorious shade of blue! This is by Color Club polish and it is part of the Birchbox Custom Collection. The color is Insta-this. (find it here) She got her's through Birchbox and I was pretty bummed until I figured out you can just buy it straight! AND they have a sweet deal that a purchase over $10 is free shipping. So I got another polish as well. I'll preview it when ready! For now I'm loving the blue!!

A friend of mine from Seattle came to visit family in LA for a wedding. They drove down. Her kids are the sweetest ever and so I made them a couple of blankets to take back in the car and use in Seattle where it is cooler.  For her boy, I used this fun rocket/space print that I *think* glows in the dark! For her girl who is into all things Paris I found this awesome Paris print!! (both fabrics from JoAnn's!) Both kids were thrilled and loved them! 

I have been so lazy about the gym, but since we moved we finally got the gym childcare sorted out! So I have been trying my hardest to go 2-3x a week. Monday I did one of my Momsanity workouts at home so Wednesday I hit the gym. I did Chest and triceps and then some incline walking on the treadmill. I was all amped up about using the stair mill but they were all taken!! :( But it was still a good workout. After coming home and getting H down for her nap, I made my favorite smoothie! Almond milk, vanilla protein powder, frozen banana, spoon of peanut butter and a couple of ice cubes. Soo yummy! 

 

So THIS has been our week. Yes #teethingsucks She had a tooth pop through this week. I thought OH well now it will get better. Its gotten WORSE. :( She is not doing the ear infection cry so I think its more teeth coming in. I hope its quick! This is no fun!

 

So that Oh so perfect manicure - yeahhhh. Apparently washing your car, doing dishes, unclogging a clogged toilet, and then deep cleaning the bathroom is not so good. I am going to see if not using the top coat helps. I feel like it made the polish layers hard and they chipped easier.
